Is there a way to make the "index" text element actually show the "key" you should press to use it?
Item hotbar - show "key" assigned to slot, rather than "index"

Not automatically no...
You could create your own script that do so.
Perhaps with a dictionary slot index -> key character.
Then when the slot is initialized you can display the key you want
